sap flowing again

Sap is again flowing into the buckets of maple syrup makers.
Maple trees had not given much sap because of the recent cold period.
But...over the weekend.....above temperatures above freezing during the day
and below freezing at night....turned the sap spigots on.
Rick Matthys has taps in about ten acres near Westville...
He collected about 300 gallons of syrup over the weekend and another
300 gallons on Monday.
It takes about 40 gallons of sap to make one gallon of maple syrup.
Matthys makes about 100 gallons of syrup during a typical season.
